The Château des Bachelards vineyard was created by the Benedictine monks of Cluny around 1100. Today, it extends over 18 hectares, solely farmed organically and biodynamically, in keeping with this monastic heritage. The absence of chemicals in the soil for 18 years, combined with biodynamic practices, allow the terroirs to fully express themselves in the wines of Bachelards. The very old Gamay vines, only red grape variety in Château des Bachelards, blossom beautifully on our acidic granitic soils.
Surrounded by walls for almost a thousand years, Le Clos des Bachelards (1ha 80 ares) produces an exceptional wine. The other parcels adjoining it do not produce the same grapes. The terroir is pink granite and decomposed feldspar, with marl and blue clays that give it its uniqueness, found nowhere else in the region. All this is enhanced by certified organic and biodynamic viticulture that preserves its incomparable naturalness. This wine is unique, it belongs here.
TASTING: The robe displays a deep, dark garnet hue, promising a wine of great intensity. The nose is distinctive and captivating, opening with pronounced floral aromas led by peony. It reveals remarkable aromatic complexity, interwoven with delicate spicy notes and a subtlety that unfolds beautifully with aeration. On the palate, the attack is broad, silky, and generous. The mid-palate impresses with its velvety texture, remarkable concentration, and the extreme finesse of its tannins. The long, elegant finish confirms the unique personality of this wine. Already captivating in its youth thanks to its exceptional density, this wine is built for long aging, with the potential to evolve gracefully over 40 years.
PAIRINGS: The Clos 2020 will go well with organic lentil ragout with foie gras, sweetbreads with cream sauce, poached Bresse poularde or wood-grilled entrecôte.
VITICULTURE :
Organic certified FR-BIO-15 and biodynamic certified by Demeter and Biodyvin. High density (10,000 vines/hectare), very old Gamay vines under massal selection. Agroforestry and plant cover in the vineyards for biotope balance and biodiversity. Hand-picked fruit at optimum maturity in 16kg boxes only. Very low yields of around 30 hl/ha.
VINIFICATION AND AGING:
Reception of grape harvest by gravity, destemming, vinification in raw concrete vats, 28-
day vatting time, 22-month ageing in casks and oak barrels in order to preserve its freshness and to consolidate its substance. Indigenous yeasts only, no carbonic or semi-carbonic maceration, no thermovinification.
